Today we are going to make coconut milk fish gravy. Coconut oil and coconut milk has healing property and we should use that often in our dishes. Most of us think that coconut oil has got a lot of fat but all it has is Saturated fat which is very good for health. Today in our channel we are going to make coconut milk fish gravy by blending Kerala style and Thai style fish curries. Ingredients Seer fish – 3 big pieces Coconut oil – As required Coconut Milk – 1st and 2nd extract (300ml each) Spices – Star anise, cinnamon, cardamom, cloves Coriander seeds Pepper corns Turmeric powder Mixed herbs , instead of that you can use lemon leaves and lemon grass Since we are using only dry spices I have dried onion and taken that as an ingredient for added flavour Dry chillies – 4/5 4 Garlic cloves Curry leaves We are going to grind all these For marinating fish – Vinegar and salt Lets first do marination. Required amount of rock salt Turmeric powder Vinegar You can use lemon juice instead of vinegar Mix these well with fish and let it marinate for 20 minutes Repeat the process for other side of the fish Let us dry roast our spices now First comes Chilly Roast it in low flame Roast until you get chilly smell Coriander seeds Garlic – no need for peeling Curry leaves Pepper corns Dried onion switch it off when you see slight fume Lets now grind all the roasted items until it becomes a coarse powder It took me 20 – 25 minutes to get into this consistency We have taken out the fish we kept for marination Switch on the gas and keep the tawa in low flame Pour 2- 3 spoons of coconut oil As we are going to shallow fry, make sure oil is greased in all the areas of tawa Here I have used Chithirai cold pressed coconut oil from ESS Organics We can get all the health benefits of coconut oil by using cold pressed one. Let us shallow fry Fish pieces in coconut oil No need to deep fry as it is going to get cooked in gravy Cook both the sides for 2 mins each Added benefit of using quality coconut oil is we can easily feel and enjoy the aroma of coconut oil ! Switch off the stove after 2 mins of cooking on both the sides In the same pan add a spoonful of coconut oil Once the oil gets heated add all the spices one by one Adding ground masala into this Add mixed herbs to the fish on both the sides and edges Let us add 2nd coconut milk (watery) into this Mix it well and add fish pieces into it Close the lid and let it cook for 5 minutes Adding required amount of Salt Avoid mixing it with spatula as it will make fish to break into pieces. Instead shake it once in a while. Once it boils add 1st coconut milk (thick) and do not allow it to boil. Let it be in simmer for 2 minutes. Mix it by shaking the tawa. Check for salt and add if needed. Switching off the stove!
