Hello everyone, today’s recipe is a fish curry with coconut milk. Here I have got 400 grams of fish cut into small pieces. We need two large onions, which needs to be finely chopped, 3 tomatoes (if they are really sour, 2 will be enough), 6 pods of garlic and a piece of ginger. I have finely chopped the onions, tomatoes, ginger and garlic. Here I have also got 3 chillies (slit) We need a piece of fish tamarind. If you do not have it, normal tamarind can be used instead. Next we need turmeric powder, chilli powder, coriander powder, mustard seeds, fenugreek seeds, salt, oil (preferably coconut oil) and coconut milk. Here I am using coconut milk powder. Lets heat the pan and add 2 tablespoon of oil. I am using the traditional clay pot here. We can also use normal pan instead. Once oil is hot, add 1 teaspoon mustard seeds and 1/2 teaspoon fenugreek seeds.
Cover it when they begin to crackle. Once mustard seeds crackle, add the ginger, garlic and the chillies into it. Stir it until the raw smell goes off. Next add the chopped onions into the pan. Add some salt and mix it well.
Fry the onions until translucent. The onion is done, we can add the dry spices now. Here I have got 1 tsp of turmeric powder , 1 1/2 tbsp of kashmiri chilli powder and 1 tbsp of coriander powder. I am adding them together into the pot to prevent it from getting burned. Stir it until the raw smell goes off. Make sure that the flame is in low. Once the raw smell of the spices goes off, add the chopped tomatoes and mix well. Pour quarter cup of water to the tomatoes. If you not using a clay pot, you can skip adding water here. Cover and cook the tomatoes in medium flame. Meanwhile I have prepared 1 cup of coconut milk by mixing 2 tablespoon of coconut milk powder in hot water. Stir the tomatoes intermittently. Once tomatoes are cooked, add the fish tamarind to it and mix well. Now add 1 cup of coconut milk, a cup of water and salt (to taste). Cover and cook until the it starts boiling. When the water starts to boil, add in the fish. Make sure that you do not stir it (or stir it gently), otherwise the fish pieces might break. Cover and cook it. It will take about 10-15 minutes for fish to cook. Now the fish looks to be cooked. Now we can add 1/4 cup of thick coconut milk. Here I mixed 1 tablespoon of coconut milk powder in 1/4 cup of hot water. Do not stir it using a spoon, instead rotate the pan slightly to mix the coconut milk. I am switching off the flame now. It tastes really nice. I am also adding in a teaspoon of coconut oil to it. So the fish curry is ready now. If you have got curry leaves, please add in now to garnish. Hope you liked this video.
