some fish steaks at the pit and it’s real easy to do. Here we’re prepping a
28 inch 11 pound striper caught in the North Atlantic. This is an awesome fish,
if you’ve never had it, you definitely gotta check it out. Now, before we start grilling, we’re gonna make a simple
sriracha butter sauce. You can make your own type
of sauce for this, alright. But this is an idea. Just heat up some butter,
throw in some sriracha and it’s all good. Alright let’s start grilling. Now today we’re going to be using our Santa Maria grill, alright. You use what grill you
have, what you prefer. We’re also gonna be cooking
up the fish head of course, gonna be cooking up the fish
tail, some fins, oh man. Some of the best eating
off this fish is the head and the tails of course, any
fisherman will tell you that. Alright, you got a
medium temperature going and we’re gonna throw these fish steaks direct over the fire. But with our Santa Maria we’re
able to keep the temperature in check by simply raising the bridge. It’s like you don’t want
to cook these steaks fast, you only gonna dry out this fish, right, so you do it nice and slow. We got plenty of time to
pit, kick back and relax. That’s what it’s all about right? Now we got that sriracha butter
basting all over the top. Yeah, can you smell that? It smells good. And if you can’t you’re
on the wrong damn channel. Oh man, take a look at that. Oh man. Now the striper of course is
also known as the striped bass or rockfish sometimes, and it’s actually been introduced
all along the coastline even on the west coast, in the Gulf. But the fisherman will tell
you the best of the best taste of the striper comes from
the North Atlantic coast. And it’s those cold waters perhaps that make it real special. Now after a little bit we’ll
just give these a flip. Alright, now while we’re
waiting for those steaks to finish off, we’re gonna make ourselves a little basil sauce and it’s a, it requires of course mayonnaise, Parmesan cheese, garlic,
basil of course and lemon. Alright, you can get the exact ingredients if you head on over to our website and check it out, bbqpitboys.com. Oh man, oh this is gonna be good. Now you of course can use
your favorite fish sauce for basting or serving, alright, but you might want to check this out, this is some real good eating right there. Man, and don’t let anybody
tell you you can’t use your old hickory as a spoon. Alright, the fish is nearly done. And so we’re gonna hit
it with this basil sauce. (rooster crows) Obviously chicken approved. Nothing better like I said
than kicking back at the pit, cooking up some fish. Don’t get any better than this. Maybe it could if you
hauled in a 40 pounder. In fact I think it was
over 120 pounder netted in the late 1800’s. This is a prize fish and they
can live up to 30 years, so. They’re gonna be good. I say it’s time to eat. (saxophone blues music) ♪ Gonna put on my bib ♪ ♪ Gonna mix me some sauce ♪ ♪ Grab my andouille baby
show you who’s boss ♪ ♪ Got my mesquite in my hair ♪ ♪ Baby I don’t care ♪ Now as I said before some of
the best eating is the head, the tail, so man, the fruits of your labor right here. It just doesn’t get any better than this. Get some of that cheap meat. It’s moist and tender right off that tail. You can pass on the steaks,

  7. Hell yea boys!! I just got into your videos today and went on an afternoon binge (hours long). At first of course you would assume southerners, but then I heard the pronunciation of “mozzarella” and some other things. Then I saw you guys driving and it looked like CT. Then I saw the video of catching blue crabs and I saw the boat licenses. Knowing you’re all north east boys makes this so much better!!! Im from Long Island so when we get out to the upstate house to hunt and cook outdoors, that is the time of our lives.

  11. It kinda looks like they started with a fresh striper, but then switched to a frozen one. Why would you need a big saw to cut steaks? He's got that machete, and all he does with that is stir the sauce? Looks frozen.

  12. Looks awesome but these guys must really hate the taste of meat. Smother everything in sauces galore. Try cooking a steak with salt and pepper and it will blow your mind. Especially on a Santa Maria Style BBQ…
