Today I will be making delicious jalebis. In North India jalebis are served in break fast with puris and spicy potatoes. Other part of India it is served as dessert. So the recipe I am giving you it will make 10-12 jalebis. It depends on the size you make. We need 1/2 cup of all purpose flour. 1 teaspoon of gram flour 1/2 teaspoon of sugar 1/2 teaspoon of oil 1/2 teaspoon of yeast And about 1/2 cup of luke warm water. So first we are going to dissolve the yeast. 1/2 teaspoon of yeast we will dissolve in 1 spoon of water. And 1/2 cup of all purpose flour. 1 teaspoon of gram flour 1/2 teaspoon of sugar 1/2 teaspoon of oil Let’s mix it together. And now we are going to add little bit less than 1/2 cup of lukewarm water. Little at a time. So we don’t make any lumps it should be very smooth batter. And after make the batter it should be sitting for about an hour. Maybe little bit warmer place you can put it in the oven Batter is ready. So this is the right consistency of the batter. So I am going to cover this and put it in oven for about an hour. I will make syrup for the jalebis. For this I need 1 cup of sugar. 1/2 cup of water 1 tablespoon of lemon juice Pinch of cardamom powder. And pinch of saffron. And I will boil this on medium high and after it boils close the heat. But do mix it in between so sugar doesn’t sit in the bottom. Here my batter is ready. It has been sitting for an hour. I like to use these ketchup bottles to squeeze the jalebis. So I am going to fill with batter in the bottle. Here I already I have my stove on medium high I like to use canola oil. And in pan it should be at least 3-4 inch of oil to fry the jalebis it comes out better. So I am going to check if oil is ready so I am just going to drop. And see they came up looks like my oil is little bit hotter than I need so I am going to close the heat just for few minutes. My oil is ready and I am going to squeeze it in circular motion very firmly. And make sure they are light brown both sides. It will take about half a minute before the jalebis are done. They are looking nice gold brown, take them out. My jalebis are ready to put it in the syrup. And close the heat. When you put the jalebis in the syrup make sure syrup is hot. And transfer my jalebis to the syrup which I have already have it ready. Few at a time. Turn them. Soothen for a few seconds so they absorb the syrup. Looks really good, very tempting.
