Today I am going to share one more authentic recipe of Odisha which is Mahurali Macha Chud Chuda (Indian Carplet cooked in Mustard gravy) Mahurali is a very small fish for this recipe, we cook the notification bell so that whenever I post any recipe, you will be notified about it first so now let’s start preparing this authentic recipe Ingredients so here I have taken Mahurali fish for the chud chuda this fish is very famous in Odisha I have marinated the fish with 1 teaspoon of turmeric powder and 2 teaspoons of salt for 10 minutes now we will fry these the quantity of fish is 300 g in total first of all we will heat a cooking dish (kadhai) then I have added 1 tablespoon of mustard oil now allow it to heat the oil is piping hot now so now we will add the fish you need to heat the until it’s piping hot, followed by adding the marinated fish because if you add the fish, before the oil is heated to perfection then it will stick to the bottom of cooking dish so do keep that in mind we almost fried the fish for a minute now so now we will flip/turn these and see how beautifully these flipped without sticking to the bottom so finally we are flipping the fish do keep on regulating the flame from medium-high while frying and fry the fish in parts it won’t take much time to fry it hardly takes 2-3 minutes these needs to be golden brown frying is done now now we will take them out to a plate likewise, fry rest of the fish don’t fry the entire quantity of fish in one go because these may stick to one another and break so fry these in parts so I fried 300 g of fish in 3 parts, that is 100 g in one batch so fry accordingly, depending on the amount of fish that you take so now you can see we have fried all the fish now we will prepare a masala (spice mix) in which we will cook the fish first, we need to make a spice mix for chud chuda for that we need mustard seeds here I have taken 1 tablespoon of black mustard seeds that I have soaked for an hour strain and add it to the blending pot now to this we will add 2 teaspoons of whole jeera that is cumin seeds then I will add 1 dry red chilli after breaking it into two parts first we will coarsely blend all the ingredients adding water in parts followed by adding garlic cloves and blend once again because if we add the garlic cloves along with other ingredients, then the mustard seeds along with whole cumin, will not blend into a fine paste so now let’s blend you can see I have coarsely blended all the ingredients except garlic cloves with 1 tablespoon of water now we will add 5 cloves of garlic to it now we will blend everything into a fine paste, along with 1 more tablespoon of water so as you can see, our mustard paste is ready now let’s move on to prepare the gravy to prepare the gravy, I am using the same cooking dish (kadhai) in which I have fried the fish to this I have added 1 tablespoon of mustard oil now we will allow it to heat now the oil is heated to perfection and to this I will add 1 teaspoon of pancha phutana you might know this as ‘panch phoran’ now to this we will add 1 medium chopped tomato ‘Pancha Phutana” is basically a mix of 5 whole spices so you can read about it in the description box and comments section below about what all spices we mix, to prepare this authentic Odia tempering this is basically famous in Assam, West Bengal and Odisha and we almost add it in every curry recipe this is an authentic spice/tempering of our region so if you add the whole spice mix in different fish curries or any authentic Odia recipe then it definitely enhances the taste making the dish more tasty and delicious now you can see the chopped tomato is fried beautifully it took about a minute to fry now I will keep the flame on medium and I will add 2 tablespoons of water to moist the chopped tomato, so that it can mix with other condiments bring it to a boil first followed by simmering the flame to cook the chopped tomato now you can see it has come to a boil now I will keep the flame on medium then we will allow it to cook for 2 minutes along with water tomato is moist now now we will add the turmeric powder 1 teaspoon of haldi (turmeric powder) mix well now we will add the main ingredient that is ‘sorisa bata’ i.e mustard paste give it a mix now you can see how beautifully the mustard paste has mixed along with the tomato gravy for 30-40 seconds I have stirred the paste along with the tomato gravy now I will add 1 cup of water and mix the gravy has started to bubble up now I will add 1 more cup of water to the gravy so here I have added about 450-500 ml of water now we will bring the gravy to a boil I will add 6 green chillies now you can omit the step if you want the gravy is boiling again as you can see the gravy has boiled to perfection now it almost took 2-3 minutes to boil now we will add the fried fish gently place the fish to soak the mustard gravy else all the fish will break now we will add alt to taste now give it a gentle mix and likewise we need to as you can see the amount of water for making the gravy so we need to cook it for more 2-3 minutes on high flame followed by switching off the flame so as you can see now, our ‘Macha Chud Chuda’ is perfectly done now I will switch off the flame and cover it with a lid you can serve it along with long grained rice or any steamed rice of your choice this combination really
