Vegan and Dairy Free Eggnog! Healthy Christmas Recipes – Mind Over Munch

Happy Thanksgiving, Munchies! I hope you are having a wonderful day with
family and loved ones. Thumbs up if you are enjoying the holiday! It’s Thursday, so I’m still here like every
week (like every week, like every week) to bring you a new video, and today I figured
it would be the perfect time to share some healthy eggnog recipes. So we are making eggnog two ways: dairy-free
and vegan! Say what?! Both of these are from my Ho Ho Healthy Christmas
ebook. Let’s start with my dairy-free eggnog. For this recipe, you will need: almond milk
or dairy-free milk of choice, egg substitute (now egg substitute is pasteurized, which
means it’s safe to consume without cooking), vanilla, cinnamon, nutmeg, sweetener of choice,
and salt. Add all of your ingredients into a blender
and blend them on up. Pour into a glass, top with some coconut whipped
cream, some cinnamon sticks, and ground cinnamon. So tasty! Traditionally, eggnog is very high in calories
and fat, because it’s pretty much made of egg yolks, heavy cream, and whole milk. My dairy-free version is much more macro-friendly
and actually is pretty nutritious, because we’re using egg substitute rather than whole
eggs. Now, yes, whole eggs offer many great nutrients,
but when it’s so condensed with the full-fat dairy it ends up being more than our body
really appreciates at one time if consumed super regularly. Alright, so now let’s make my vegan eggnog. For this recipe, you will need: light coconut
milk, almond milk or dairy-free milk of choice, frozen banana, maple syrup, cinnamon, nutmeg,
vanilla extract, and sweetener of choice. Add all of your ingredients into a blender
and blend them on up. It’s so delicious! Now, obviously, because this one is vegan,
there cannot be any egg products at all, but this drink manages to get the rich texture
from the banana and holiday flavor eggnog offers, using all plant-based ingredients. I hope you’ll give it a try! Both of these recipes are in my Ho Ho Healthy

  9. If I want a really thick and creamy vegan eggnog without banana are there any thickeners you would recommend? I'm not really worried about the calories (I promise to watch my portion size). I'm thinking adding coconut cream and cornstarch and cooking it? But I don't want the coconut to overwhelm the flavour. Is there a way to recreate that egg yolk kind of flavour? I'm full of questions.

  11. I don't know what egg nog is supposed to taste like, but if egg flavor is actually a component of it, then I'd suggest adding kala namak (Indian black salt) to the vegan version, if you can get it, to mimic the eggy flavor.

  12. Silk also makes vegan and dairy free "egg" nog that is very good. I not vegan or dairy free, but prefer that one because it has a better consistency,

  13. What would the calorie count be for each? My favourite eggnog has 350 calories per cup. It is so smooth and delicious but I feel guilty after I drink it. And it is hard to drink just one cup it is so addictive. I used to hate eggnog but then I found this one. I would. Love a tasty substitute that is calorie smart. I will try yours for sure.

  14. Egg causes more harm than good. The industry isn't allowed to advertise it as healthy or safe as regulated by the USDA. So this vegan option is a winner!

It truly is your full guide to everything meal prep! It is layed out in a simple, easy to read way, using lots of colour and high quality pictures, that are absolutely gorgeous. The recipe book at the back is also a great addition. I plan to start meal prep next weekend!

    "Ho Ho Healthy" is beautiful, the recipes are festive (many are great for my vegan sister which is great as well), and it gets me so excited for Christmas.

  22. I wish the vegan eggnog actually tasted like eggnog. I've been trying so many recipes to find one for my mom, who's vegan, and none of the recipes from anywhere seem to have it down.
